Poultry can be made tastier and more nutritious and more use can be made of its fat if you wrap it in a dough of flour and oil and put it into the oven.

Ingredients

chicken thighs (bone in & skin)
3 Tbsolive oil
3 dropsasafoetida
1 tspfish sauce
pinchsalt
1 Tbspparsley
1 tsporegano
1 tspcelery seed
dashblack pepper

Steps

  1. Make pastry.
  2. Mix oil & herbs
  3. Remove bones from chicken, put herb mix under skin
  4. Wrap in pastry, cook in 350 until done (30 min?)
