Tart of Rice*

Boil your rice, and put in the yolks of 2 or 3 eggs into the Rice, and when it is boiled, put it into a dish(?) and season it with suger, cinamon and ginger and butter, and the juice of 2 or 3 oranges, and put it on the fire again.

Ingredients

1-1/2 c.rice
3 c.water
3egg yolks
6 Tbs.butter
1 Tbs.cinnamon
1 tsp.ginger
1/4 c.sugar

Steps

  1. Boil rice in covered pot (til soft)
  2. Add butter
  3. Separate & beat egg yolks

  4. Add egg yolks stirring briskly
  5. Add other ingredients, blending
  6. Cook until thick.

Note

Suggestions - make sure rice is soft
-add more ginger
-more orange juice? orange peel?
-add cinnamon stick to boiling rice?
