Boil quinces w/ leek, honey, garum and oil in defrutum and serve. Or boil quinces in honey.
Ingredients
2 | quinces |
1 | leek |
1-1/2 c. | honey |
2 c. | defrutum (reduced chianti) |
splash | oil |
healthy splash | garum |
Steps
- Peel and cut up quinces. Chop leek. Put in pan with liquids, boil until mushy.
- (Also boiled quinces in honey.)
Note
Maybe a little too healthy on the garum splash. But the quince goo deluxe was well received.
