Boil quinces w/ leek, honey, garum and oil in defrutum and serve. Or boil quinces in honey.

Ingredients

2quinces
1leek
1-1/2 c.honey
2 c.defrutum (reduced chianti)
splashoil
healthy splashgarum

Steps

  1. Peel and cut up quinces. Chop leek. Put in pan with liquids, boil until mushy.
  2. (Also boiled quinces in honey.)

Note

Maybe a little too healthy on the garum splash. But the quince goo deluxe was well received.
