Benes yfryed. Take benes and seeþ hem almost til þey bersten. Take and wring out þe water clene. Do þerto oynouns ysode and ymynced, and garlec þerwith; frye hem in oil oþer in grece, & do þerto powdour douce; & serue it forth.
Take beans & boil them until the are almost bursting. Drain them well. Add onions, boiled & minced, and garlic. Fry them in oil or grease & sprinkle w/ Powder douce and serve it forth.
White pea bean version
1/2 c. | cooked small white pea beans |
2 Tbs. | olive oil - for frying |
3/4 c. | cooked, minced yellow onion (1 med.) |
1 | clove garlic, minced |
Pinto bean version
1/2 c. | cooked pinto beans |
2 Tbs. | olive oil - for frying |
3/4 c. | cooked, minced yellow onion (1 med.) |
1 | clove garlic, minced |
Steps
- Sauté soft onions in oil. When slightly browned, add beans, then garlic. Cook well.
Note
We served poudre douce and poudre forte, etc. on the side.
Also we added chopped parsley as a garnish.
Try mixed beans. (which are period?)
Smells good!
