Peeres in Confyt. Take peeres and pare hem clene. Take gode rede wyne & mulberes oþer saundres and seeþ þe peeres þerin & whan þei buth ysode, take hem up, make a syryp of wyne greke. oþer vernage with blaunche powdour oþer white sugur and powdour gyngur & do the peres þerin. seeþ it a lytel & messe it forth.

Ingredients

1Barlett
22 Bosc
5red Anjou pears
3 c.red wine
3/4 tsp.red saunders
1/4 tsp.ginger
1/4 tsp.cinnamon
3 Tbs.white sugar

Steps

  1. Peel & core pears, cut in halves.
  2. Cook in wine and saunders until pears are done; remove the pears & reserve.
    Add enough wine to make 2 cups.
  3. Add remaining ingredients. Cook down somewhat to syrup.

Would like to try again with mulberries.
