"dish of the poor"
Ingredients
2 c. | lentils |
onion, chopped | |
oil | |
1 c. | long grain rice |
water | |
2 | onions |
2 Tbs. | oil |
Steps
- Boil lentils 45 min or until tender.
- Fry a chopped onion in oil until golden. Add to lentils, season.
- Add 1 C long grain rice, & enough water to male up 2 C liquid. Simmer gently 20 min., until rice cooked, added more water if necessary.
- Slice 2 onions in half moons. Fry in 2 Tb very hot oil until dark brown & sweet, almost caramelized.
- Service lentils hot or cold, garnished w/ onion slices.

...not good version, leaves out meat
