Furmenty*
For to make furmenty. Nym clene wete & bray it in a morter wel, þat þe holys gon al of, & seyt yt til yt breste; & nym yt vp & lat it kele. And nym fayre fresch broþ & swete mylk of alandys or swete mylk of kyne and temper yt al. & nym þe 3olkys of eyryn & saffron & do þerto. Boyle it a lityl & set yt adoun, & messe yt forþ wyþ fat venysoun & fresch motoun.
Take clean wheat & bray it in a mortar to remove hulls. Seethe it till the berries burst, then remove from heat & let cool. Take fresh fair broth & sweet milk of almonds or cow & mix it all together. Add yolks of eggs & saffron to the mixture. Boil it a little and take it off the fire & serve with fat venison or fresh mutton.

Steps
- Combine all ingredients in a saucepan & cook over low heat until thickened, stirring constantly. Be careful not to scorch mixture. Keep heat low so eggs don't curdle.

Best served HOT!
We made 2 versions - 1 with cow milk, 1 with Almond milk
Both were nearly indistinguishable, which was a surprise!
Cheap & easy, but bland & not visually appealing.
We left out broth, because we were in a veg.-kosher kitchen. You could use 1/2 broth/ 1/2 milk...
Good for campfire cookery - nice hot breakfast food (but not with a hangover! yuck...)
Our wheat must have been hulled. We didn't see any.
We used red winter wheat.
Costs: cheap
Is it suggestible for a Feast? Yes, in small doses. Careful not to burn-on - make in small batches.
Does it cost to much? No
It isn't pretty to look at - but it tastes fine. Good for campfire cookery. Easy to make
vegetarian -- but usually served with meat
Non-dairy vegetarian -- has eggs.
