"dish of the poor"

Ingredients

2 c.lentils
onion, chopped
oil
1 c.long grain rice
water
2onions
2 Tbs.oil

Steps

  1. Boil lentils 45 min or until tender.
  2. Fry a chopped onion in oil until golden. Add to lentils, season.
  3. Add 1 C long grain rice, & enough water to male up 2 C liquid. Simmer gently 20 min., until rice cooked, added more water if necessary.
  4. Slice 2 onions in half moons. Fry in 2 Tb very hot oil until dark brown & sweet, almost caramelized.
  5. Service lentils hot or cold, garnished w/ onion slices.

...not good version, leaves out meat
